OUR SHELLFISH

Matunuck Oyster Farm not only specializes in producing oysters, but also in a variety of local quality shellfish.

American Oyster
Crassostrea virginica
The American oyster grows native up and down the east coast of the United States. The ones grown here, in the northeast, are sought after by oyster connoisseurs all over the world and Matunuck Oysters are among the finest. Their flavor is crisp and briny with a slightly sweet finish.

Steamer Clam
Mya arenaria
Steamer clams, also called, soft shell clams, are delicate bivalves harvested from the wild in the same body of water where we grow our oysters, little neck clams and bay scallops. We have been harvesting wild steamer clams in Matunuck
long before the oyster farm was established (in 2002). In fact, it was because of customers comments on the exceptional flavor of our steamers that made us decide that Matunuck would be an ideal place for our farm.

Little Neck Clam
Mercenaria mercenaria

Our little necks clams (or quahogs) are grown in the sand on our farm. We secure predator netting over the seeded clams to protect them from crabs, starfish and gulls. After about three years of growing in the crisp, clean Matunuck waters, the little necks are harvested to order, immediately iced and shipped. This ensures the freshest flavor possible.

Native Bay Scallop
Argopecten irradians

Most native bay scallops grown at Matunuck Oyster Farm are given to government agencies for restoration efforts in order to revitalize the wild population of bay scallops. However, when available, our customers love to steam them whole or shuck them and add them to their favorite scallop recipe (and the shells make great ornaments). Fresh native bay scallops are a rarity and the experience of eating one of these beautiful creatures is one that will be long remembered. The native bay scallops grown here at the farm are availible to be sold .
